Become an Apprentice

ApprenticeStep 1: Applying for an Apprenticeship

  • Note: You must be a high school graduate or equivalent and meet the miniumum age requirement of the program to qualify.

Step 2: Acceptance into a 2–3 Year Program

You will need to:

  • Register with the Department of Labor, Bureau of Apprenticeship Training, through your program coordinator
  • Complete and register with ACFEF as an apprentice—please fill out an Apprentice Data Form
  • Join ACF as a Student Culinarian within 90 days and maintain membership throughout apprenticeship
  • (2-Year) Complete a log book documenting 4,000 work hours at your assigned facility(s) and 384 classroom hours in 12 mandatory classes
  • (3-Year) Complete a log book documenting 6,000 work hours at your assigned facility(s) and 576 classroom hours in 12 mandatory classes

Throughout your apprenticeship, you should also:

  • Keep your Program Coordinator abreast of your progress in the program
  • Attend related instructional classes
  • Attend chapter meetings
  • Participate in industry events and competitions

Step 3: Fulfill graduation requirements to complete apprenticeship program:

Graduation Requirements

Complete Apprentice Graduation Form and Include:

  • Confirmation of on-the-job training hours by assigned facility
  • ACFEF training log final evaluation form
  • Transcript of related instruction (384 / 576 classroom hours)
  • Apprenticeship practical exam judge’s summary form
  • Cook’s/Pastry Cook’s written test score

Certification Upon Completion

Upon completetion of a two or three year apprenticeship program, you are qualified to test for the certified culinarian (CC), certified pastry culinarian (CPC), certified sous chef (CSC) or certified working pastry chef (CWPC). Choose one of the testing options below.

Testing Options

To receive a CC or CPC designation:

  • Take the designated apprenticeship practical exam. The purpose of this exam is to verify fundamental culinary skills and skill areas, and serve as a platform for apprentices to become familiar with ACF certification testing procedures.
  • Take a written exam which is provided by the national office and administered by your program coordinator.

To receive CSC or CWPC:

  • Take the CSC or CWPC written and practical exam. The CSC and CWPC exam is the same exam given to all CSC or CWPC candidates, however, arrangements for the exam are made through the apprentice coordinator or designated official.
