Chef & Child Foundation (CCF) Cookbook
Vince Blancato
  • Cookbook is accumulative recipes from ACF Chefs that are geared towards children, parents and with an emphasis on healthy nutritional food items
  • Rough Draft in hand. Final copy at National Convention in Orlando, July 2007
  • Pre-print registration will take place at the Convention. Approx. cost unknown at this time. Will be available at Convention
  • "School Wellness Programs" in place through the School Foodservices at each school district in the state of Florida. CCF members at each local chapter needs to contact each school district in their area to assist in childhood obesity
  • "Kids in the Kitchen" website is in place through the government
Certification
John Kinsella
  • An Independent Accreditation Commission needs to set up
  • Once an Accreditation Commission is in place the next step would be to make licensing a mandatory requisite (similar process as other agencies that certify chefs in other countries)
  • Core course work will coincide with each level of certification to build a step process within the levels of certification
  • New criteria for trainers and practical testing sites will need to be developed
  • A discussion took place on why the increase for fees pertaining to certification. John noted that was due to the processing procedure at the National Office. Jeff Rotz couldn’t understand why, since most of the work for the process is done by the evaluating examiners. Most in attendance had to agree with Jeff.

  • ACF National office has increased their communications with local chapters and media of the effected area, ie. Chefs receiving certification, awards, etc…
Sponsorships

  • The National Board and Office is on an aggressive approach for sponsorships/partnerships. This will assist with lowering the registration fees at our Conferences and Conventions
  • Chapter Presidents expressed their concerns with the high fees to register for one of these events. One day passes are in place and curtain parts of the Convention in July is free to the members, ie. Trade Show & General Session
Special Notes of Interest
Heidi Cramb & John Kinsella
  • A forum will take place this September with numerous associations, ie. ACF, NRA, CMA, DMA, Etc… to discuss the possibility of forming one association that would umbrella all associations.
  • The American Academy of Chefs (A.A.C.) Chairman, John Minnitti mentioned that there will two new awards giving at the National Convention for "Celebrity Chefs" and "Industry Writers". The reason behind these awards is to get this sector of the industry interested in ACF while promoting the ACF at the same time.
  • A "Recipe Data Base" will be up and running by this fall for members to post and share their recipes with other members.
  • I asked, "What is being done to up date the Apprenticeship Materials since the Art & Science was published in the 1970’s"? John made mention that this is being "looked into". Some of the process that the apprentices have to do is now on line.
